Rainbow bars!

Finally got around to making homemade “rainbow cookies.”
They put store bought ones to shame.

For the “American” cupcakes I made a cherry-buttercream frosting (with blueberry on top) on a vanilla cupcake.

I reached a milestone in my adult life today, I passed up an opportunity to eat the best rainbow cookies I’ve ever and most likely will ever eat in my life. (trust me, I know my cookies)
If you are Italian American you can most likely understand how hard turning down free Italian pastries is BUT knowing that I’m a pound or two away from not fitting into any pants I own is keeping me from doing so….One cannot live by leggings alone.
DiMonda has some amazing pastries but I stress the fact at how good the layered cookies are. If I ever get married they will be on the buffet table next to the cannoli and tiramisu. And I guess lace cookies for my mom.
Without geeking out too hard core about my almost beastlike obsession with pastries, I HIGHLY recommend this bakery if you are on Long Island.
