This recipe is from the February 2011 issue of Bon Appetit magazine

I’m writing the recipe down from memory so if anything is off I apologize

The only part of the original recipe I changed is the amount of walnuts. They asked for 1 cup and it was way too much.

-10 tbs butter

-1 1/2 cups sugar

-3/4 cups of cocoa powder, unsweetened

-2 tbs.water

-1 tsp. vanilla

-1/4 tsp. salt

-2 eggs chilled

-1/3 cup flour + 1tbs.

-1/2 cup walnuts

Preheat oven to 325

Line 8X8 pan with aluminum foil, spray foil with Pam/veg.spray/etc. Set aside.

Melt butter on medium heat in saucepan, stir frequently

Keep cooking until butter stops foaming and brown spots form on the bottom of pan

Remove from heat and immediately add sugar, cocoa, vanilla and salt

Mix together well, let cool slightly for about 5 minutes

When slightly cooled (still hot) add 2 eggs one at a time and mix well

Once eggs are incorporated, add flour and beat with whisk about 60 times

Mixture should be shiny and thick by this point

Add walnuts

Bake for 30 minutes? I really have no idea, I never set a time.

Once you can stick a toothpick in the middle and it comes out clean, it’s done
