Happy Birthday Month to my brother, sister-in-law and niece!
“Almond joy cake”
Almond-coconut cake, almond-swiss meringue frosting, chocolate coconut ganache
So I made my own warped version of this recipe: http://blog.hgtv.com/design/2012/05/05/daily-delight-cindo-de-mayo-pinata-cookies/
Cinco de Mayo Pinata cookies.
These ladies have been swoopin around the internet for a while and I thought I’d try them out…I will definitely do this process again for another occasion but hopefully with a new recipe..the one given is super greasy (1 cup of oil AND 1 cup of butter, yuck)
Also, I didn’t have a donkey cut-out (crazy, I know) so I used a small circle…I also doubled the batch by using a smaller cut out. This whole recipe on yields 6 cookies if you use the bigger shapes.
They turned out looking like stringless yo- yos, but they were cute and super colorful. Easy process, just a lot of work (think Italian-rainbow cookies)
TOMORROW
I turn this into a cake
